Vibrant Eggnog

This year, I’ve been thinking about ways to make decadent holiday treats more vibrant, and I immediately thought of eggnog. This high-fat, high-calorie indulgence never left me feeling very well, but this vibrant version is so much more healthful. In my opinion, it tastes better, too. Why not try it out for a little Christmas cheer? (Adding a tiny splash of dark rum, cognac, or good brandy totally optional!) This recipe serves 6 to 8.
Ingredients
Serves 6-8
- 4 cups vanilla unsweetened almond milk plus ⅓ cup full-fat coconut milk (for a richer version, use 2 cups almond milk and 2 cups full-fat coconut milk)
- ¼ cup raw honey or pure maple syrup
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- ¼ teaspoon allspice
- Optional: 4 organic egg yolks, if you want to go classic (I don’t typically include)
- Coconut, almond, or other non-dairy whipped cream
Instructions
Put all the ingredients except the whipped cream together in a blender and blend until fully mixed and frothy, about 2 minutes on high. Pour into a pitcher and refrigerate for at least one hour, or up to overnight. To serve, stir the nog, then pour into six small mugs or festive glasses. Top with whipped cream and an additional sprinkle of cinnamon or nutmeg. Cheers, and Merry Christmas!
